Chaîne des Rôtisseurs breaks tradition

Breaking away from the traditional formal sit-down affairs, the Chaine des Rotisseurs recently hosted a casual beach party at the El Mar Resort and Spa, a luxurious, tranquil hideaway north of Cebu for a weekend of gourmet and lifestyle engagement.

Headed by Bailli Delegue National Michel Lhuillier and Club President Hans Huelenhofer, the celebration brought together members and guests who appreciate excellent food, fine wine, and genuine camaraderie.

Engulfed in relaxed surroundings, everyone gathered at the Beach Bar for refreshing drinks and inventive cocktails while savoring light appetizers such as assorted cheeses, Pâté de Foie Gras, a selection of olives, tiny succulent salads, pickled and salted picas, and a variety of cold cuts — all with distinct, piquant and appetite whetting flavors.

Prior to dinner, a Fire Dance ensued where performers swung ignited balls around their bodies in a mesmerizing display of artistry, bringing a perfect blend of danger and delight to the well-orchestrated demonstration.

The tailor-made menu was a delightful mix of culinary influences. The Seafood Bisque with poached prawns was brilliantly paired with Oak Vineyards Chardonnay, creating an impeccable balance of tastes.

Next came generous servings of Grilled Angus Tenderloin and Lobster in Cognac Demi-Glace cooked to perfection and served with truffled mashed potato, roasted root vegetables and beetroot tuile. This was paired with Oak Vineyards Cabernet Sauvignon.

For dessert, local Sweet Sticky RiceUbe Masi and cashew nuts were served with choices from the Chaine’s Aperitif Bar.

The lighthearted fabulous dinner was a triumph, a shift from the usual customary formal settings.

A special “thank you” to vice president and chief operating officer Eduard Loop, general manager Mary Grace Bartolome, director of sales and marketing Carina Breva, executive chef Fredreck Capoy, senior chef de partie Sandro Balaod, chef de partie Armando Segovia and the dozens of waiting staff for their impeccable service while ensuring that all wishes were patiently heard and immediately responded to.

The Chaine des Rotisseurs, the world’s oldest international gastronomic society, founded in Paris in 1248, upheld its mantra of preserving camaraderie among members as they enjoyed the pleasures of the table while promoting excellence in all areas of the hospitality arts.
